The finest mixture of grilled and confit seasonal vegetables, tossed in sesame oil and topped with a pair of orange segment shaped passion fruit jelly.
混合新鲜的季节蔬菜采用碳烤,低温油浸,新鲜刨片各种复杂的烹饪工艺 ,配自制芝麻酱,加以热情果制作的分子料理桔瓣
海盐 Sea salt 1g
橄榄油 Olive oil 3ml 自制芝麻酱Home-made sesame paste 50 g
百香果Passion fruit 20g 小胡萝卜Mini carrot 20g
西芹 Celery 20g 芝麻菜Arugula salad 20g
茴香 Fennel 20g 樱桃萝卜 Baby radish 20g
吉利片 Gelatin 5g 红椒Red pepper 50g
1.把混合的蔬菜刨成薄片并接以冰水浸泡至饱满。
Slice the mixed vegetables and dip them into ice water.
2.红椒和茴香碳烤,加香料低温橄榄油长时间煨制
Grill the red pepper and fennel, add in salt, spices and olive oil and slow cook.
3.用百香果加吉利片做成分子料理橘子状。
Mix the passion fruit and gelatin together to form an orange fruity jelly
4.用芝麻酱拌匀混合蔬菜,装盘加橄榄油蔬菜脆片。
Add the home-made sesame paste with the mixed vegetable, add in olive oil and vegetables chips.
