1To be completely honest, we weren’t super thrilled when we heard that we were going to try a new Chinese restaurant for our review this month. I’ve been eating Chinese food for 27 years and I was worried it might be boring—I didn’t think there would be anything special about it. However, the experience we had at Hu Pan in the the Hyatt Hotel made me wish every single meal I had could be that tasty and marvelous. Even though the location in Qujiang can be a bit of a deal breaker if you live in the downtown area, I promise that you won’t regret any second you spend in there. Not only is the environment and atmosphere in that restaurant very relaxed and homey, but also the food is splendid and will allow you to taste a variety of cuisines from China.

For starters, we had jellyfish with wasabi, which was amazing! Don’t freak out yet, it’s not like we ate beaver or placenta. It’s actually quite crunchy and chewy, and the wasabi sauce is invigorating; Is there anything that could perk you up that easily? The chef is a clever guy—this appetizer really prepared our appetite for the main course—some fancy Beijing roasted duck! Is it weird to eat Beijing food in Xi’an? It can be, but don’t you worry about this when at the Hyatt. I had chance to talk to the chef after dinner, and he told me he used to work in Beijing for almost twenty years. Obviously he knows what he’s doing. The duck was really crispy and not that greasy, and with a homemade pancake filled with spring onion, cucumber slices, some garlic and their own special sauce, it’s divine! Why settle for anything else when you could have a Beijing roasted duck like this!

Finally, you guys must try their special dessert. It’s maybe even a once in a lifetime experience. It’s a combination of plum Creme Brûlée and hawthorn plum tea. I never had plum Creme Brûlée; it’s just so amazing that you can taste both egg with caramel and fruity plum. Also, with the sweet and sour tea, the wonderful fragrance of the Crème Brûlée will linger in your mouth.

So, if you were like me and thinking that there’s no way that some Chinese food could surprise you, you need to go to Hu Pan at the Hyatt. Seriously. Go. Try something different. You won’t regret it.
