When a busy sunday has found you ravenous and having not even had time for lunch, this makes for that ideal early supper. One bowl, one baking dish and supper is done in no time at all.

I enjoy this the next day, cold and set firmly, with a blob of mayo on it, munching away as i potter about the house doing odds and ends.

A leafy salad will finish it off well for a perfect afternoon lunch too. If you’re wanting a savoury idea for a tea, cut the set tart into smaller squares and serve with lightly buttered brown or health bread.

9-11. Fry the onion and garlic in the butter until soft and golden. Cool it slightly.

2. Stir all ingredients together. Tip the mixture into a lightly buttered pyrex/baking dish, “spatching” it in place.

3. Sprinkle the grated cheddar over.  Bake in preheated oven at 180 °C on the middle shelf for about 25-30 minutes or until golden brown and set.

4. Serve cut into fat wedges or squares with a side salad or, cold as a snack slapped between a bun with a slick of mayo and a few leafy greens.9-2
